Ingredients:

250g young coltsfoot leaves
1 tbsp fresh savory, finely minced
3 garlic cloves, very finely chopped
1 knob of butter
1 tsp white wine vinegar

Method:

Shred the coltsfoot leaves finely at a bias (ie diagonally).

Bring a pan of salted water to a boil, add the coltsfoot leaves and boil for about 5 minutes, or until the leaf shreds are very tender.

Drain into a colander. At this point you can either puree the leaves, or serve them whole.

Turn into a serving dish, toss with the minced savory, chopped garlic and vinegar to dress, top with a knob of butter and serve as an accompaniment.
