The name of this dish is in Pigin and cam be read as 'coconut sweet' with the 'i' sounded like the English 'ee' in feet and the 'u' in 'suit' sounded like the English 'w'.

Ingredients:

2 coconuts
150ml water
200g sugar
1 lemon

Method:

Crack open the coconuts then remove the white flesh. Wash well and peel off the dark outer skin then cut the flesh into thin slices.

Combine the water and sugar in a pan. Heat gently until the sugar dissolves then bring the mixture to a boil. Cook, stirring frequently, for 10 minutes then add 1 tbsp lemon juice and cook for about 10 minutes more, or until the sugar begins to caramelize to a golden brown.

Take off the heat and stir in the coconut pieces. Quickly mound the mixture on baking trays lined with greaseproof (waxed) paper with the aid of a fork and a spoon.

Allow the coconut candies to coo and harden before peeling off the paper and either storing or serving.
