Coconut Ice: A British recipe for a Christmas treat of candy bars made from a blend of granulated sugar, milk and desiccated coconut coloured red with food colouring.
Ingredients:
450g (1 lb) granulated sugar
150ml (3/5 cup) milk
125g (5 oz) desiccated coconut
a few drops of red food colouring
Method:
Combine the milk and sugar in a pan and heat gently until the sugar has dissolved. Bring the mixture to a boil and continue boiling gently for 10 minutes, or until a small drop dropped into cold water forms a soft ball (this is the soft ball stage, equivalent to 116°C [240°F] as measured on a confectioner's thermometer).
Take off the heat and stir in the coconut. Pour half the resultant mixture into a greased (20 x 15cm [8 x 6 in]) shallow baking tin. Quickly stir in a few drops of red food colouring into the remaining mixture then pour this into the tin over the first mixture.
Leave until slightly set then mark into bars or small squares and put aside until completely set. Turn out and separate the pieces when cold. Store in an air-tight tin or jar.
