Ingredients:

100g butter
100g brown sugar
200ml sweetened condensed milk
250g malt or wine biscuits, crushed
200g dried apricots, finely chopped
160g shredded coconut
80g chocolate chips (optional)

Method:

Melt the butter in a pan and stir-in the brown sugar and condensed milk. Mix-in the crushed biscuits, apricots and chocolate chips. Meanwhile grease a 23cm square cake pan and press the mixture into this.

Chill in the fridge to set (at least 2 hours) then cut into squares.
