Ciambelline al Vino (Italian Wine Biscuits) is a traditional Italian recipe for a classic piped biscuit (cookie) of a flour, sugar, olive oil and white wine batter leavened with baking powder that can be tied together with ribbon as an attractive Christmas gift. Ingredients:
500g plain flour
200g sugar
120ml extra-virgin olive oil
120ml dry white wine
3 tsp baking powder
pinch of salt
sugar for dusting
Method:
Sift the flour into a bowl then form a well in the centre and add the remaining ingredients. Work the ingredients together until you have a soft dough.
Divide the dough into pieces about 25g each. Take each piece in turn and roll into a rope. Bring the ends together and pinch the edges to seal into a ring.
Dip one side in sugar to coat then arrange the rings on a non-stick baking tay. Transfer to an oven pre-heated to 180°C and bake for about 15 minutes (do not allow them to colour, they should be pale golden around the edges only.
Transfer to a wire rack to cool. These are excellent with coffee or a sweet dessert wine. It is also traditional to present these biscuits as gifts. Because of the hole in the centre, they can be formed into a stack and secured with a ribbon passed through the centre.
