Christmas Sundaes is a traditional Scottish recipe for a classic leftovers dessert of Christmas pudding ice cream with coconut, cherries and cranberry sauce that makes an ideal post-Christmas treat for children. Ingredients:
8 scoops of Christmas pudding ice cream
100g shredded coconut
a few green glacé or maraschino cherries, to garnish
cold cranberry sauce, to drizzle
1 x 100g bar good-quality dark chocolate (70% cocoa solids)
Method:
Scoop the ice cream and shape into balls. Roll these in the shredded coconut to coat, then arrange two coconut dusted ice cream balls in each of four serving glasses.
Garnish each ice cream ball with a green cherry, spoon over some chilled cranberry sauce, grate over some of the dark chocolate to garnish and serve.
