Here is a recipe that I found in the Good Fare Christmas pamphlet published in Edinburgh in 1958 that contains a number of Scottish Christmas and Hogmanay recipes.
Polish soldiers during the second world war introduced these classic biscuits (cookies) to Scotland and they have been served in Edinburgh ever since.
Ingredients:
450g plain flour
200ml honey
200g sugar
60g butter, melted and cooled
pinch of salt
1 tsp finely-grated orange zest
1 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp bicarbonate of soda
Method:
Combine the honey and sugar in a small saucepan and heat gently until dissolved. Set aside to cool, then turn into a mixing bowl and gradually work in the flour, stirring constantly as you add it.
Now add the baking soda, salt, spices, grated orange zest and the butter. Bring the ingredients together as a dough, then turn out onto a floured work surface and knead thoroughly.
Roll out to about 6mm thick and cut into rounds, or festive shapes. Transfer the biscuits to a lightly-greased baking tray. Dust the surface of the biscuits with flour, then transfer to an oven pre-heated to 170°C and bake for about 15 minutes, or until lightly coloured around the edges and cooked through.
Allow to cool on the baking tray for 5 minutes, then transfer to a wire rack to cool completely before storing or serving. These biscuits will mature if kept for up to 1 week before serving.
