This is a classic spicy accompaniment from Sri Lanka.
Ingredients:
50g dried red chillies
50g red onion, finely chopped
1 tbsp dried fish or dried prawns
Lime juice, to taste
Salt. to taste
Method:
Place a dry frying pan over medium heat. When hot add the dried chillies and toast, stirring frequently, for about three minutes, until fragrant.
Turn the chillies into a bowl, cover with warm water and soak for 30 minutes. Remove the stems and then transfer the chillies to a mortar or food processor.
Using the pestle (or food processor) pound or grind the chillies with just a little water until they become a rough paste.
Add the onion and dried fish or prawns and continue grinding until combined.
Squeeze a little lime juice over it all and add salt to taste. Turn into a bowl and serve.
