Ingredients:
2 chicken breasts, skinned
1 tsp cornflour
60ml chicken stock
3 tbsp oil
1/2 tsp sugar
1/2 tsp salt
3 tbsp wild plum ketchup
1 tbsp soy sauce
3 tbsp sherry or dry white wine
1 tbsp water
Method
Cut the chicken into 3cm cubes. Meanwhile mix together the sherry (or wine), 2 tbsp plum sauce, soy sauce, salt and vinegar together in a bowl. Add the chicken and marinate for 30 minutes (but preferably over night).
Heat a wok until very hot then add oil and use this to stir-fry the chicken until almost done. Add the chicken stock, the remaining plum sauce and the chicken marinade. Allow to simmer for 3 minutes then stir-together the cornflour and water and add to the sauce. Simmer, stirring frequently, until the sauce has thickened.
