Chestnut Jam is a traditional British recipe for a classic jam made with pureed chestnuts in a syrup base flavoured with vanilla extract. The full recipe is presented here and I hope you enjoy this classic British version of: Chestnut Jam.

Ingredients:
1kg chestnuts
750g sugar
3 tbsp vanilla extract
310ml water
Method:
Add the chestnuts to a pan, brig to a boil and cook for about 15 minutes, or until cooked through then drain and peel. Puree by pressing through a fine-meshed wire sieve.
Meanwhile, combine the sugar and water in a pan. Heat, stirring continually, until the sugar has dissolved then bring to a boil. Stir-in the chestnut puree and the vanilla extract and continue cooking until the mixture is quite stiff.
Ladle into sterilized jars that have been warmed in an oven set to 110°C for 15 minutes.
Allow 1cm of head space then secure the lid, allow to cool and store.
