Make this delicious and easy salsa recipe that goes with everything. It's a perfect accompaniment to tacos or serve alongside some tortilla chips for dipping.
Ingredients:
3 plum tomatoes
½ medium onion, left whole
2 fresh jalapeño chillies
2 garlic cloves
juice of ½ lime
10g coriander leaves, chopped (optional)
Method:
Arrange the tomatoes, onion, jalapeños and garlic cloves on a hot barbecue, griddle pan or in a hot dry frying pan. Cook for 6-8 minutes, turning occasionally, until charred all over. Do not remove the black skin from the tomatoes or jalapeños — it adds the smoky flavour this salsa needs.
Remove the skin from the garlic cloves. Crush with 1 tsp salt using a molcajete or pestle and mortar, then scrape into a bowl. Peel and coarsely chop the onion and mash using the pestle and mortar. Do the same with the charred jalapeños and tomatoes.
Mash everything together in a bowl before adding 4–5 tbsp water to loosen, followed by the lime juice and coriander.
Mix well then set aside to rest for 10 minutes before serving.
This will keep chilled in the refrigerator for up to two days.
