Ingredients:

5 small apples
200g miniature marshmallows
1 tbsp water
420g soft caramels

Method:

Line a baking tray with greaseproof (waxed) paper and grease it heavily. Wash the apples then dry thoroughly before inserting lolly sticks (or trimmed chopsticks) into the stalk end.

Meanwhile, combine the marshmallows, water and caramels in a medium-sized, heavy-based saucepan. Cook over medium heat, stirring constantly, until both the marshmallows and the caramels melt and the mixture becomes smooth. Take off the heat and set aside to cool for 2 minutes then dip the apples, one at a time, into the caramel mixture, ensuring that they are evenly coated before setting on the greaseproof paper to cool.

Once the apples have cooled completely transfer to the refrigerator and cool for at least two hours before serving. These are best served chilled, as it makes the marshmallow and caramel mix very firm.
