This is a fusion recipe that flavours chicken portions with Cameroonian green spice marinade (or Caribbean green seasoning) and fajita spice blend before cooking on a barbecue.

Method:

Wash the chicken and pat dry with kitchen paper.

Add the chicken to a clean bowl then scatter over the salt and bouillon powder. Mix well to combine, cover the bowl then set aside to marinate in your refrigerator for at least two hours (but best left over night).

Add the all-purpose green marinade to the chicken along with the fajita spice blend. Mix to combine then rub the spice mix into the chicken.

Turn the contents of the bowl into a saucepan. Bring to a simmer and cook for about 20 minutes, or until the chicken is about 4/5 cooked.

In the meantime, pre-heat your barbecue.

Remove the chicken from the saucepan and arrange on your hot barbecue. Cook for about 10–15 minutes turning frequently and basting with the left-over marinade in the saucepan until the chicken is lightly charred and cooked through.
