Flavour-wise this spice blend is Cameroon in a jar, containing the native spices djangsang and calabash nutmeg blended with the local dried habanero chillies and the local Penja white pepper.

Penja white pepper is white pepper made from black pepper plants grown in the special volcanic soil of Penja in Cameroon. It has a powerful, warm, and slightly citrusy flavour that’s much more exciting than regular black pepper.

Method:

Combine the ingredients in a spice grinder and render to a fine powder.

Spoon into a jar and store in a cool, dark, cupboard.
