This is a curry powder from Cameroon that also acts as a general seasoning.

Ingredients:

1 tbsp Coriander seeds
1 tbsp cumin seeds
2 tbsp ground Turmeric
1 tsp ground ginger
2 tsp fenugreek seeds
1 tsp Black peppercorns
1 tsp Fennel seeds
1/2 tsp sea salt

Method:

Toast the whole spices individually in a small, dry, non-stick frying pan for about 90 seconds to 2 minutes, until slightly darkened and aromatic. Don't let them burn, or your spice blend will be bitter.

As each spice finishes toasting, turn out onto a plate to cool.

Once cooled, combine the whole and ground spices in a spice grinder. Render to a fine powder then transfer to a sealed jar.

It will keep for up to three months. Use as a curry base or as a general flavouring spice blend.
