Curry en Poudre (Cameroonian Curry Spice Blend) is traditional Cameroonian recipe for a classic one-pot dish of maize and beans cooked with crayfish powder, smoked fish and red oil in a lightly-spiced base. Toast the whole spices individually in a small, dry, non-stick frying pan for about 90 seconds to 2 minutes, until slightly darkened and aromatic. Don't let them burn, or your spice blend will be bitter.
As each spice finishes toasting, turn out onto a plate to cool.
Once cooled, combine the whole and ground spices in a spice grinder. Render to a fine powder then transfer to a sealed jar.
It will keep for up to three months. Use as a curry base or as a general flavouring spice blend.
