Camarões à Moda do Nacional (National-style Prawns)
Camarões à Moda do Nacional (National-style Prawns) is a traditional Mozambican recipe for a classic dish of prawns baked with garlic and chillies in a margarine base that is one of the national dishes of Mozambique. Also known as Camarões à moda de Moçambique this is a classic Mozambican prawn dish that counts amongst the national dishes of Mozambique.
Ingredients:
2kg medium-sized prawns
6 large garlic cloves
salt, to taste
piri-piri chillies, to taste
250g margarine
Method:
Wash and drain the prawns. Using kitchen shears, slit them down the back so that you can remove the intestines and butterfly them open (but do not halve them and do not remove the shells).
Pound together the garlic, salt and chillies in a mortar. Spread this mixture over the prawns, set aside and allow to marinate for 20 minutes.
Arrange the prawns in an earthenware oven-proof pot, add the margarine then transfer to an oven pre-heated to 200°C and bake for about 15 minutes, or until just coloured.
Remove from the pot and serve with fried sweet potato slices.
