Combine the eggs, buttermilk and oil in a bowl. Sift the dry ingredients to a separate bowl. Add the liquid ingredients to the dry ingredients and bring together as a dough. If the dough is a little wet add some more flour. Cover and refrigerate over night.
The following day, roll the dough out and use a pastry cutter to cut out the doughnuts (an egg cup works for the hole). Heat oil in a wok or a deep fryer to 180°C and add the doughnuts a few at a time. Remove with a slotted spoon and set aside as soon as they float to the surface of the oil.
Dust with icing sugar into which a little ground cinnamon has been mixed.
