Cajun Fried Rice

Ingredients:

240g Andouille sausage (or any other cooked, spicy, sausage) cut into 1cm dice
1 medium onion, sliced
1 tsp garlic, minced
300g sliced okra
750g cooked long-grain white rice
1 tsp cayenne pepper
1 tsp paprika
1/2 tsp salt

Method:

Add the sausage to a non-stick pan and stir often until browned (about 2 minutes). Add the onion, garlic and okra and fry until the onion is soft (about 5 minutes).

Gently add the rice and all the spices and, with frequent stirring, cook until the rice is hot and golden and the okra is tender (about 5 minutes). Pour into a serving bowl and serve with bread.
