Coat meat/fish in melted butter then rub 4 tsp of Cajun the blackening spices generously into the meat.
Place in very hot, dry, frying pan preferably on a barbecue. Take care if cooking this inside as it will smoke. Fry for about 4 minutes a side, until cooked through (pour about 1tbsp of butter on the upper side whilst cooking).
Serve immediately with a green or bean salad and potatoes.
