Cachorra de Milho ou Mandioca (Maize or Cassava Cachorras)

Cachorra de Milho ou Mandioca (Maize or Cassava Cachorras) is a traditional Mozambican recipe for a classic snack of maize or cassava flour cooked to a thick paste with water that are shaped into sticks, fried until golden and served with tea. Ingredients:

500g maize flour or cassava flour
100g freshly-grated coconut
sugar, to taste
1/2 tsp salt
2 cardamom pods, crushed
1/2 tsp fennel seeds
oil for frying

Method:

Bring 500ml water to a boil, stir in the flour, beat until smooth then cook gently, stirring constantly, until thick. Stir in all the remaining ingredients, continue cooking until very stiff then take off the heat and set aside to cool. Continue stirring constantly as the mixture cools to ensure it does not burn.

Turn the dough onto a work surface, knead until smooth then shape into sticks about 1cm in diameter and 6cm long.

Heat oil to a depth of 1cm in a frying pan. When hot, add the dough sticks and fry until golden brown all over and cooked through.

Drain on kitchen paper and set aside to cool. Serve as an accompaniment to tea.
