This is a traditional Irish tea-time pancake. They are usually cooked on a griddle and served spread with honey.
Ingredients:
240g plain flour
1/2 tsp salt
1/2 tsp bicarbonate of soda
2 eggs, beaten
buttermilk, to mix
Method:
Sift together the flour, salt and bicarbonate of soda into a bowl. Beat in the eggs, followed by sufficient buttermilk to form quite a thick batter.
eat a buttered griddle or heavy frying pan then drop in the batter by the tablespoonful. Cook for about 2 minutes, or until browned on the base then flip over and cook for about 2 minutes on the other side.
