Boxty Bread

This is a classic soda bread from Northern Ireland that's made with a blend of mashed and grated potatoes as the base.

Ingredients:

340g potatoes, peeled
340g potatoes, peeled and grated
360g self-raising flour
1 tsp baking powder
60g butter, melted
milk to mix
salt and ground white pepper, to taste

Method:

Place the grated potatoes in a cloth and wring out all the excess liquid into a bowl. Set the bowl aside for the starch to sink to the bottom.

Bring a pan of salted water to a boil. Add the peeled potatoes and boil for about 30 minutes, or until tender. Drain thoroughly and mash then season to taste.

Stir the grated potatoes into the mashed potatoes then sift in the flour and baking powder. Drain off the liquid from the starch then add the starch to the potato and flour mixture, stirring to combine.

Now stir in the melted butter and mix the ingredients to form a soft dough (add a little milk if needed). Turn the resultant dough out onto a lightly-floured work surface and knead gently until smooth and elastic. Divide into four equal pieces and shape these into round, flat, cakes. Mark the top of each one with a cross and brush over a little milk to glaze.

Transfer the cakes onto a greased baking tray then place in an oven pre-heated to 200°C (Gas Mark 6) and bake for between 25 and 30 minutes, or until well risen and golden brown.

Divide into quarters (farls as they are known in Northern Ireland), breaking the cakes along the cross marks, and serve warm with butter.
