Ingredients:

200g butter (or margarine)
1 tbsp golden syrup
140g plain flour
200g sugar
140g desiccated coconut
140g rolled oats
1/2 tsp bicarbonate of soda (dissolve in 2 tbsp hot water)

Method:

Combine the butter and syrup in a pan and heat gently until the butter melts. Take off the heat and turn into a bowl. Mix in the flour, sugar, coconut and oats until combined then add the bicarbonate of soda (dissolved in the water).

Lightly grease a baking tray then drop the mixture onto this by the tablespoon (allow at least 5cm between them). Transfer to an oven pre-heated to 170°C and bake for about 12 minutes, or until golden brown. Allow to cool slightly on the baking tray then transfer to a wire rack to cool completely.

Take with you to the fireworks display and munch contentedly as you watch the show.
