Bolinhos de Mandioca com Mel (Cassava and Honey Muffins)

Beat the eggs lightly in a bowl. Add the honey and beat with the eggs until the mixture whitens.
Still beating constantly, mix in the water, brandy and oil. In a separate bowl mix the cassava flour and baking powder. Now stir the dry ingredients into the liquid ingredients until you have a muffin batter (do not over mix).
Immediately spoon the mixture into the wells of a 12-cup muffin tin lined with paper (fill the wells no more than 3/4 full). Transfer to an oven pre-heated to 180°C (350°F/Gas Mark 4) and bake for about 20 minutes, or until well-risen and golden brown on top.
