Bolinhos de Najita (Najita Balls)

Ingredients:

200ml condensed milk
3 eggs
3 tbsp butter, melted and cooled
500g plain flour
3 tsp baking powder
1/2 tsp ground cardamom seeds
140g semolina
200g powdered sugar
100ml coconut milk
grated coconut for dusting
oil for frying

Method:

In a bowl, whisk together the condensed milk, eggs and melted butter.

In a second bowl, mix together the flour, baking powder, ground cardamom and semolina. Add the liquid ingredients to the dry ingredients and mix thoroughly to combine. Turn onto a floured work surface, knead until smooth then shape with your hands into balls about 2cm in diameter.

Heat oil to a depth of about 2cm in a wok or deep pan. Whilst the oil is heating, combine the coconut milk and sugar in another pan. Heat gently until the sugar has dissolved then bring to a simmer and cook to form a syrup. Take off the heat and set aside.

When the oil is hot, drop in the dough balls and fry until golden brown all over. Remove with a slotted spoon and drain on kitchen paper. Drop into the hot syrup, then roll in the grated coconut to coat. Set aside to cool and harden before serving.
