Blue Bayou Jambalaya is a traditional American (Louisiana Cajun) recipe for classic one-pot dish of rice, ham and prawns in a mushroom catsup based sauce. The full recipe is presented here and I hope you enjoy this classic American version of: Blue Bayou Jambalaya.

Ingredients:
1 medium onion, sliced
80g green bell pepper, chopped
1 clove garlic, minced
180g, uncooked, white rice
50g butter
240ml Mushroom Catsup
600ml cups water
4 tbsp cider vinegar
1 tbsp salt
1/8 tbsp cayenne pepper
160g cubed, cooked ham
250g raw prawns, peeled and deveined
Method:
Fry the onion, green bell pepper, garlic and rice in melted butter in a large frying pan until the onion is translucent. Add the catsup and all the remaining ingredients, except the prawns. Simmer for 25–30 minutes, or until the rice is tender.
Add the prawns and continue to simmer, tossing the mixture gently with a fork until the prawns are pink and tender (about 5 minutes). Serve with rice.
