This is a classic Thai method for serving sea blite accompanied by Thai chilli paste.

Method:

Bring a pan of water to a boil. Add the sea blite fronds and blanch for 4 minutes.

Drain in a colander then immediately plunge in a bowl of iced water (this stops any further cooking and helps preserve the colour).

Drain the sea blite then arrange on a plate and serve accompanied by the Thai chilli paste.
