Blackberry-iced Biscuits

Method:

Cream together the sugar and egg by beating in a bowl until pale and forming ribbons.

Now sift over the flour and add in the vanilla extract and salt. Mix well to combine then bring the ingredients together as a dough. Shape into a bowl, cover with clingfilm and chill in the refrigerator for an hour. In the meantime, pre-heat your oven to 160°C.

After this time, turn out onto a lightly-floured work surface and roll out to about 15mm thick. Cut into biscuits with a pastry cutter or a sharp knife. Transfer to baking trays lined with baking parchment.

Set in the centre of your pre-heated oven and bake for 12 minutes. Remove from the oven and allow to cool on the trays. Note that they will be very soft when you remove them from the oven, but will crisp as they cool.

Now prepare the blackberry icing. Add a generous handful of blackberries to a saucepan with a couple of tablespoons of water. Bring to a simmer and cook until soft then mix in icing sugar by the tablespoon until the mixture is thick. Remember that the blackberry icing will get thicker as it cools.

Take off the heat and allow to cool until it can be handled then spread the icing over the cooled biscuits. Scatter over a few dried lavender flowers (if using).

Allow the icing to harden before serving.
