Either crush the wafers, or break into crumbs in a food processor. Turn into a bowl then stir in the sugar and butter. Mix to combine and press the mix into the base of a 22cm diameter pie plate. Set in the refrigerator and chill for at least 1 hour, to set.
In the meantime, combine the chocolate and cream in a pan. Cook very gently over low heat, stirring occasionally, until the chocolate has melted and combined with the cream. Take off the heat and stir in the vanilla extract then set aside until cold.
Soften the chocolate ice cream then spread evenly over the wafer crumb base. Top with the chocolate sauce then place in the freezer and allow to set.
Remove from the freezer, soften the orange sherbet and use to top the cake. Return to the freezer and freeze until firm. Slice into wedges and serve immediately.
