Peel and grate the cassava. Place in a kitchen towel and squeeze out the excess starch and moisture. Mix-in the sugar and grated coconut. Grease a baking sheet and place metal rings on this. Spoon the mixture into these rings and bake for about 20 minutes at 140°C. Check to make sure the biscuits have set, then remove the ring and turn over. Return to the oven and cook for a further 10 minutes.
