Beignets de la Mangue (Mango Fritters)

Ingredients:

2 ripe mangoes
125g plain flour
120ml milk
1 tsp baking powder
1 tsp sugar
pinch of salt
icing sugar for dusting
oil for frying

Method:

Peel the mangoes and strip the flesh off the pits then cube the the flesh.

Heat oil in deep fryer or deep pan to 180°C. Prepare a batter by whisking together the four, milk, baking powder, sugar and salt.

When the oil is hot, dip the mango cubes in the batter then drop in the hot oil and fry until golden brown all over and heated through.

Remove the fritters from the oil, drain on kitchen paper and serve warm, dusted with the icing sugar.
