Bedfordshire Biscuits

Ingredients:

75g margarine
75g caster sugar
75g plain flour
2 tbsp golden syrup (corn syrup)
1/2 tsp vanilla extract
1/2 tsp bicarbonate of soda
175g porridge oats

Method:

Cream together the margarine and sugar until pale and fluffy. Sift the flour into a clean bowl then work into the creamed mixture. Add the syrup and vanilla extract, then ix the bicarbonate of soda with 1 tbsp boiling water and add this. Finally add the porridge oats and fold in to combine.

Turn the resultant mixture onto a lightly-floured work surface and roll out about 1cm thick. Cut into rounds with biscuit (cookie cutters) and arrange these on greased baking trays. Transfer to an oven pre-heated to 180°C and bake for about 15 minutes, or until lightly-browned and cooked through.

When done, transfer to a wire rack and allow to cool completely before storing or serving.
