Basic Cajun Jambalaya

Ingredients:

1 tbsp unsalted butter
2 tbsp vegetable oil
2 medium onions, chopped
450g pickled pork (or fresh pork), diced
450g smoked ham, diced
2 cloves garlic, peeled and minced
1/2 tsp dried thyme
1 tbsp chopped parsley
450g smoked sausage, sliced
1l beef or chicken stock or hot water
360g rice
2 bay leaves
1/2 tsp cayenne pepper (or to taste)

Method:

Add the butter and oil to a large, lidded, saucepan. Heat until the butter has melted then add the onions and pork and fry until the onions have softened (about 4 minutes). Add the ham, garlic, thyme and parsley and fry for a further 5 minutes. Add the sausage and cook until this has browned.

Now stir-in the stock and bring to the boil before adding the rice, bay leaves and cayenne pepper. Reduce to a simmer on very low heat, cover and cook for about 45 minutes (check after 25 minutes to see whether or not all the liquid has been absorbed by the rice. If necessary add more water (about 80ml) at this time.
