Ingredients:
4 mullet fillets (grey or red)
juice of 3 limes
100g butter, melted
1 tsp salt
1/2 tsp freshly-ground black pepper
Method:
Arrange the fillets in a single layer, skin side down in a non-reactive dish. Drizzle over the lime juice, cover and set aside in the refrigerator for 4 hours.
After this time, pre-heat your barbecue and brush the fish with melted butter. Place on your hot barbecue and grill over hot coals for about 5 minutes per side, or until cooked through. Whilst the fish is cooking brush frequently with the melted butter. The fish is done when the flesh flakes easily with a fork.
Season to taste with the salt and black pepper and serve.
