Combine the redcurrant jelly and mustard in a saucepan. Heat gently until the jelly melts then take off the heat and submerge the lamb chops in the glaze.
Remove the lamb from the glaze, put on a barbecue above hot coals and cook for about 4 minutes per side, or until done to your liking. Baste frequently with the glaze as the lamb cooks.
In the meantime, fry the shallots in the butter until golden brown. Take off the heat, whisk in the white wine vinegar and set aside.
