Ingredients:

180g plain flour
70g desiccated coconut
80g rolled oats
1 tsp baking soda
1/2 tsp salt
1/4 tsp ground cinnamon
120g light brown sugar
100g softened butter
1 very ripe banana, mashed
1 egg
70g dried apricots, chopped
70g walnuts, chopped

Method:

Add the flour, coconut, baking soda, salt and cinnamon to a bowl and stir to combine. Meanwhile cream together the butter and sugar in a separate bowl until light and fluffy. Add the banana and egg and beat with a fork to combine.

Add the flour mixture to the butter mixture a little at a time, stirring to combine thoroughly after each addition. Finally add the apricots and walnuts and stir to combine.

Spoon heaped tablespoons of the dough onto a greased baking tray making sure they remain about 5cm apart. Place in an oven pre-heated to 180°C (350°F/Gas Mark 4) and bake for about 12 minutes, or until golden brown all over. Take out of the oven, allow to cool for 5 minutes then transfer to a wire rack to cool completely. If needed they will keep in an air-tight container for about 3 days.
