Banana Flapjacks is a modern British recipe for a classic flapjack made of oats, syrup, fruit and seeds using a blend of bananas and melted dates rather than the usual butter as a binding agent. These soft and chewy banana flapjacks are naturally sweetened with bananas, dates and honey to make a portable snack. They are made without refined sugar or butter and are dairy free. In this case the honey and the dates and honey act as the binding agents.
Pre-heat your oven to 160oC (gas mark 3). Line a baking tin (about 28 x 18cm) with greaseproof paper.
Peel and chop the bananas then mash in a bowl.
Chop the dates and place in a small saucepan. Add the water and honey then bring to a simmer and cook for a few minutes until the dates have broken down and the mixture becomes a thick paste.
Place the oats in a large bowl. Add the raisins, cinnamon and flax seeds, mixing to combine. Now add in the mashed banana and date paste, mixing thoroughly.
Turn the mixture into the prepared tin, levelling it with the back of a spoon.
Transfer to the centre of your pre-heated oven and bake for about 25 minutes, until the edges of the flapjack mixture start to turn golden.
Using a sharp knife, cut the large flapjack into bars (but leave in the tin). Allow to cool in the tin for at least 90 minutes before turning out and spitting into bars.
