Augurken (Dutch Lunch Pickles) is a traditional Dutch recipe for a traditional pickle of vertically-sliced cucumbers with garlic, onion, celery, spices and dill in a sweet and sour vinegar syrup pickle. Ingredients:
12 medium cucumbers (need to fit vertically in your pickling jar)
6 Celery sticks (optional)
4 Garlic cloves
4 Onion slices
Mixed spices (eg cayenne pepper, cloves, allspice, ginger, nutmeg, cumin)
4 sprigs of Dill
For the Pickling Syrup:
1l malt vinegar
4 tbsp sea salt
300g sugar
Method:
Soak the cucumbers in ice water for 3 or 4 hours; this will help preserve the colour. After this time, slice the cucumbers into 4 pieces lengthwise.
Put in jars with pieces of celery that are cut to the same size as cucumbers. To each jar, add 1 garlic clove, 1 slice of onion, 1/4 teaspoon mixed spices and a small pieces of dill.
For the pickling syrup: To each 1l of vinegar, use 4 tbsp salt and 300g sugar. Bring to a boil and pour over pickles, hot but not boiling. Seal at once. One litre of solution covers a little over 2l (4 jars) of pickles.
