Apricot Betty: A British recipe for a dessert made from a tinned apricot base baked with a sugar, breadcrumb and butter topping.
Ingredients:
2 x 425g tins of apricot halves, drained (reserve 80ml of the juice)
50g caster sugar
120g fine, fresh, breadcrumbs
50g butter, melted
Method:
Brush a 20cm diameter pie dish with melted butter and arrange half the apricots into this dish.
Sprinkle over half the caster sugar and half the breadcrumbs. Pour half the melted butter and half the reserved apricot juice over the crumbs.
Top with the remaining apricot halves, the remaining sugar and the remaining breadcrumbs. Top with the remaining melted butter and apricot juice.
Transfer to an oven pre-heated to 180°C and bake for about 30 minutes, or until the fruit are piping hot and the top is golden brown.
Serve hot, accompanied by the sauce of your choice.
