Ingredients:
250g flour
180g brown sugar
180g butter
200g quick-cook oats
180g apple butter
Method:
Mix the flour and sugar, cut in the butter until the mixture resembles coarse breadcrumbs. Add the oats and stir in until completely blended. Press half the mixture firmly into a greased 20cm square pan. Spread apple butter over the middle (allow a 5cm gap around the edges) then sprinkle the remaining mixture over the apple butter. Press down carefully, but firmly, to compact.
Bake in an oven pre-heated to 180°C (350°F/Gas Mark 4) for about 40 minutes or until lightly browned.
Allow to cool then tip onto a wire rack to cool completely. Cut into squares before serving.
