Apple Barley Pudding is a traditional Irish recipe for a classic dessert of a sweetened barley and apple purée served garnished with cream. The full recipe is presented here and I hope you enjoy this classic Irish version of: Apple Barley Pudding.

Ingredients:
4 tablespoons of Pearl barley
675g tart apples, peeled, cored and sliced
3 tbsp of Sugar
250ml of double cream
1 tbsp of lemon juice
Method:
Bring a pan of water to a boil. Add the barley and cook for 10 minutes. Now add the apple pieces and continue cooking until both the barley and the apples begin to soften.
Drain and process the mixture in a blender or by passing through a sieve.
Mix in the sugar and lemon juice, return to a saucepan and bring just to a boil. Take off the heat, turn into a bowl and allow to cool.
Set in your refrigerator and chill for at least 2 hours.
Once cooled, turn into a bowl, garnish with the cream, whipped, and serve.
