Ingredients:
80g butter
80g vegetable shortening
2 eggs
235g sugar
500g flour
2 tsp cream of tartar
1 tsp baking soda
1/4 tsp salt
2 tbsp sugar
2 tsp cinnamon
Method:
Add the butter and shortening to a bowl and beat until softened then add the eggs and sugar and continue beating until light and creamy. Sift the sugar, flour, cream of tartar, salt and baking soda into a separate bowl. Pour the egg mixture into the flour mixture a little at a time and mix to form a soft dough.
Mix the sugar and cinnamon together on a plate then tear off-walnut sized pieces of the dough. Shape into balls and roll in the egg and cinnamon mixture. Place these balls some 5cm apart on an ungreased baking tray. Place in an oven pre-heated to 180°C (350°F/Gas Mark 4) and bake for about 8 minutes, or until the cookies have flattened and turned a golden brown.
Allow to cool before storing in an air-tight jar.
