Amish Pumpkin Bread is a traditional American recipe (from the Amish [Pennsylvania Dutch] community) for a classic cake of a pumpkin mash, flour, eggs, oil and sugar batter with spices that's baked in a loaf tin. Ingredients:
450g granulated sugar
240ml vegetable oil
4 eggs, beaten
450g cooked and mashed pumpkin (canned is fine)
600g flour
160ml water
2 tbsp baking soda
2 tsp salt
1/2 tsp ground cloves
1 tsp ground cinnamon
1 tsp ground allspice
1 tsp ground nutmeg
Method:
Mix together the sugar, oil and eggs in a bowl then add the pumpkin and mix thoroughly before adding all the dry ingredients. Mix into the dough then add the water to form a batter. Pour this batter into two greased and floured 22 x 12 cm loaf tins.
Place in an oven pre-heated to 170°C (325°F/Gas Mark 3) and bake for an hour, or until cooked through and nicely browned. Allow to cool then slice before serving. This is nice spread with butter or cream cheese.
