Amish Funnel Cakes is a traditional American recipe (from the Amish [Pennsylvania Dutch] community) for a classic batter of eggs, milk, flour and sugar, leavened with baking soda that's poured through a funnel into hot oil to make sausage shapes or swirls and fried until golden before serving. The full recipe is presented here and I hope you enjoy this classic American version of: Amish Funnel Cakes.
Combine the beaten eggs, milk and sugar in a bowl. Meanwhile sift the dry ingredients into another bowl. Slowly add the egg mixture to the flour mixture, beating until smooth.
Heat oil in a wok or deep fat fryer until it reaches 180°C (350°F/Gas Mark 4). Meanwhile tip the batter into a household funnel (cover the spout with your thumb). If you don't have a funnel then cut a plastic bottle and pour the oil in there. Allow a little of the batter to stream into the oil. Cook until golden brown then remove with a slotted spoon and drain on kitchen paper.
You can make swirl and shapes as the batter drips into the oil. Be adventurous and creative! Dust the funnel cakes with icing sugar and serve hot.
