Amish Country Strawberry Pie is a traditional American recipe (from the Amish or Pennsylvania Dutch community) for a classic pie (technically a tart) of strawberries in a strawberry jello base baked in a pastry shell on top of a sweet cream cheese base. Ingredients:
Enough sweet short-crust pastry for a 22cm pie
1 tbsp icing sugar
90g cream cheese
800g whole strawberries, halved
2 tbsp light corn syrup
250ml water
3 tbsp strawberry jelly mix (jello mix)
pinch of salt
3 tbsp cornflour
Method:
Roll the pastry out and use to cover a 22cm pie dish. Place greaseproof paper (typically trimmed to a circle known as cartouche) in the base, add baking beans and place in an oven pre-heated to 180°C (350°F/Gas Mark 4) to blind bake for 15 minutes.
Beat together the cream cheese with the sugar until light and fluffy and use this mixture to line the base of the pre-baked pastry shell. Arrange the strawberries on top.
Make a glaze by adding the corn syrup, water, salt and cornflour to a pan. Whisk to combine then cook over medium heat until thickened. Take off the heat, add the jelly mix and stir to dissolve. Allow to cool a little then pour evenly over the strawberries.
Chill the pie in the refrigerator for about 20 minutes before serving.
