Amba is a traditional condiment served on sabich. It’s a tangy pickled mango sauce that has roots in the raw chutneys of India, and is very popular in Israel. While you can make it at home, it’s often store-bought.
Ingredients:
1 ripe mango
1 large or 2 small limes
1 clove of garlic
olive oil
¼ tsp mustard seeds
¼ tsp fenugreek seeds
¼ tsp cayenne pepper
¼ tsp sweet smoked paprika
¼ tsp ground turmeric
pinch of cayenne pepper (optional)
Method:
Peel and de-stone the mango, then put the flesh into a blender.
Finely grate in the lime zest, squeeze in the juice, add the zest and blitz until smooth.
Peel and finely slice the garlic, then place in a frying pan over a medium heat with ½ a tablespoon of olive oil and all the spices.
Toast until lightly golden, then stir in the blitzed mango. Season to taste, then take off the heat and set aside to cool.
Serve to accompany Israeli or Middle Eastern dishes. This is the classic condiment for the Israeli sandwich, sabish.
