Almond Curd

Ingredients:

2 sheets unflavoured gelatine
120ml cold water
240ml boiling water
240ml milk
1 tbsp almond extract
80g sugar
300ml water

Method:

Add the gelatine to the 120ml cold water in a bowl and allow to soften for 5 minutes. Pour the boiling water over the softened gelatine and stir until it has dissolved completely then add the milk and almond extract. Pour into a flat 20x20x5cm cake tin.

Refrigerate for 4 hours, until firmly set. Combine the sugar with the remaining water and stir to dissolve completely. Chill in the refrigerator. Then, using a small knife make diagonal cuts 1cm apart all the way through the almond curd. Repeat in the opposite direction to form diamond shapes. Pour the chilled sugar water over the top and serve cold.
