This recipe is for Persian-inspired roast chicken where the chicken is marinated in a blend of yoghurt and the Persian spice blend, advieh.

Ingredients:

50g advieh spice blend
1.25kg chicken portions
3 tbsp Greek yoghurt
2 tbsp olive oil
1 tbsp water
1 1/2 tsp salt
coriander leaves, to garnish

Method:

Pre-heat your oven to 180C. Grease a roasting tin with oil.

Arrange the coated chicken pieces in the roasting tin then transfer to the centre of your pre-heated oven and cook for 30 minutes.

Using tongs, turn the chicken pieces oven and continue cooking for 15 minutes more.

Remove from the oven then set under a hot grill, cooking for 5 minutes on each side.

Transfer the chicken pieces to a warmed serving dish, garnish with chopped coriander leaves and serve.
