Modern Redaction

Though the name here says 'wafer' for which we tend to think flat fried or baked breads or cakes, the Elizabethan word 'wafer' actually derives from the Medieval waffres or waffle. So you can consider these more like thick drop pancakes.

Ingredients:

320g plain flour
2 egg yolks
2 tbsp rosewater
1/2 tsp ground cinnamon
2 tbsp caster sugar
400ml (about) double cream

Method:

Sift together the flour, cinnamon and sugar into a bowl. Beat the egg yolks and rose water together then work into the flour mix. Now work in the cream until you have a thick batter of dropping consistency. Set aside to rest for 30 minutes before cooking.

You can either use a waffle iron to cook these or you can make them in a frying pan. Butter the pan, get it nice and hot and drop a ladle of the batter into the middle. Cook for about five minutes on a side then serve.
