After an extremely dry and hot summer the weather has turned wet and windy. Un-picked blackberries are rotting on the brambles. Still, a few new fresh ones are maturing. For the first week of September one weekend is forecast to be dry and sunny. So I'm going out to fetch what may be the last of the season's blackberries. Some to add to my banana snacking cake, some to freeze for later in the year (I'm looking forward to a hazelnut and blackberry cake when the hazelnuts are mature for picking) and some to use in this smoothie. My first brand new Welsh recipe for a white.
Ingredients:
375ml boiling water
6 tbsp loose leaf earl grey tea (or 4 tea bags)
450g fresh or frozen blackberries
250ml milk (either animal or vegetable)
3 tbsp honey
ice if using fresh berries
Method:
Steep the tea in the boiling water for 4 minutes.
Strain the tea leaves or remove the bags and let the tea concentrate cool for about 5 minutes or until cool enough to dip your finger in without burning.
In a high speed blender, blend together the tea concentrate, berries, milk, and honey until smooth.
If using fresh berries, add a few large handfuls of ice and blend again to get a thick, smoothie consistency.
